West Afrikan Lime Cake
by Nierika
There are variations of this recipe around that add coconut, a lime icing or frosting, but I prefer this traditional recipe.
You will find that this simple cake recipe has travelled well with ancestors from West Afrika to the Southern United States, Caribbean and as far south as Brazil.
It is a very cooling summer cake and a good way to introduce extra Vitamin C and enzymes into your diet as well as the extra protein and essential fats the pistachios give.
This is not a western-type of cake, it will be dense, almost like a pound cake or quick bread.
