Peanut soups are common throughout Afrika. Rich in protein and anti-oxidants, balanced with healthy carbs.
Recipes vary regionally from the very simple to some which are more elaborate.
Peanut or groundnut soups are often eaten as a main course along with common afrikan staple carbs such as rice, manioc, cassava, yams or plantain.

Afrikan Peanut Soup
Ingredients:
2 medium brown onions, chopped
2 large yellow or red bell peppers, chopped
2 large garlic cloves, mashed
2 Tbs. cooking oil
28 oz. can chopped tomatoes with juice
8 cups vegetable broth
1/4 tsp. crushed or coarse ground pepper corns
1/4 tsp. crushed red pepper flakes
1/4 tsp. allspice
1/2 cup cooked brown rice
2/3 cup smooth peanut butter
chopped roasted peanuts
In a large soup pot, saute onions, bell peppers and garlic in oil until onions brown and carmelize.
Add the can of tomatoes, broth, pepper and red pepper flakes. Simmer, uncovered, over low heat about 15 minutes.
Add rice, cover and simmer 30 minutes. Add the peanut butter and stir until smooth. Heat to a simmer and serve with a garnish of chopped roasted peanuts.
